I know that it takes 3,500 calories to create a pound of fat. So, if I burn 3,500 calories, I should lose a pound of fat, right?

That's true to a certain extent. If you are in deficit by 500 calories a day (burn it in exercise, consume less food or a combination of both), in a week you'd lose one pound (500 calories X 7 days equals 3,500 calories.)
This is a proven formula for losing a pound a week. However, once you've lost about 10% of your body weight, the body becomes afraid of starving and starts to burn fewer calories. It becomes more efficient. Then, 500 calories a day may no longer be sufficient.
What to do. Continue to use portion control and to exercise regularly. Then add resistance training to your program to create upper body muscle. This muscle burns fat for fuel, so you'll get an added boost in fat reduction.
